Marinated Flank Steak

Prep time: 10 minutes + marinating time
Cook time: 12-20 minutes

Meat

  • 6 lbs flank steak

Marinade

  • 1 large onion – diced ½”
  • ½ cup minced garlic
  • 4 tablespoons dry oregano
  • 4 tablespoons dry basil
  • 2 tablespoons crackled black pepper
  • 1 teaspoon chili flakes
  • 4 tablespoons paprika
  • 1/3 cup sugar
  • 2/3 cup red wine vinegar
  • 2/3 cup pineapple juice or rice vinegar
  • ½ cup oil

Cooking method

  • Combine all ingredients to create the marinade, stir well and leave to settle
  • Layer steaks with marinade – evenly distribute solids
  • Cover and refrigerate overnight
  • Remove steak from marinade
  • Season evenly with salt and pepper
  • Brush or rub with oil
  • Sear both side on hot grill and continue cooking to desired temperature
  • Remove from heat and allow to rest for 5 minutes
  • Slice ¼” bias across grain. Slicing correctly will ensure the best texture
